QUICK AND EASY GOOSEBERRY DESSERT

Sometimes you might want to round off a lighter meal with a dessert, but you don't always feel you have the time. Here's a recipe for a lovely dessert that you fix in no time. It minds its own business in the oven until it's done.
Serves 4
7 oz wholemeal or oatmeal biscuits
butter or margarine for the pan
1 tablespoon potato starch
1 lb gooseberry compote or jam
3 egg whites
2 tablespoons sugar
2 tablespoons fresh lemon juice
Split a couple of the biscuits in two and put them around the sides in a greased, oven-proof pan. Cover the bottom with remaining biscuits. Stir the potato starch into the compote or jam and pour it over the biscuits in the pan. Beat the egg whites until stiff and add sugar and lemon juice. Spread this foam over the berries in the pan.
Bake in the oven at 390F for about 20 minutes or until nicely golden and heated through.
Serve with vanilla ice cream.
You can also make this from rhubarb or cherry compote or jam.
