Hot Corn and Quorn Stew - Het gryta med majs och quorn

HOT CORN AND QUORN STEW
Het gryta med majs och Quorn

Serves 4

11 oz fillets of quorn
1 yellow and 1 red bell pepper
1 bunch fresh onions
7 oz black beans
11 oz corn off the cob
0.2 cup oil
2 tablespoons balsamic vinegar
1 teaspoon sambal oelek
1 pot fresh coriander


Brown the quorn fillets until they're nicely colored, then shread them. Cut the bell peppers in pieces and sizzle for a few minutes. Chop the onions and mix quorn, bell pepper, onions, beans and corn. Blend oil, vinegar and sambal oelek, pour it on top and heat it all through.

Sprinkle with lots of coriander and serve with rice, quinoa or just a green salad.
