Serves 4
4 to 6 bell peppers, different colors
10 oz finely chopped chorizo sausage
butter or margarine
1 large, finely chopped onion
1.6 cup boiled rice
2 tablespoons tomato paste
1 can corn, 12 oz
0.4 cup heavy cream
1 to 3 garlic cloves
1 large pinch dried oregano
salt, black pepper
0.4 cup diced feta cheese
grated cheese for baking in the oven
4 to 8 slices white bread
Heat the oven to 390F. Split the peppers lengthwise, trim them and put them in a pan, so that they resemble small bowls. Put them in the oven for about 15 minutes so they get a little roasted before you fill them with all the goodies.
Meanwhile, make the filling. Sizzle the sausage in some fat and add the onion, rice, and tomato paste to the pan and fry until a little crisp on the Surface. Then add corn, cream and crushed garlic. Flavor to taste with oregano, salt and black pepper. Also add the feta cheese.
Take out the peppers when they are a little wrinkled and roasted to loveliness. Divide the rice filling in the pepper bowls and grate some cheese on top. Put them back in the oven and bake for 20 to 30 minutes.
Serve with your favorite tomato sauce, a salad and white bread, or anything you like.
