ORANGE PARFAIT

Orange juice, egg yolks and heavy cream is what you need to make an exquisite, home-made dessert. It's one of my faithful New Year desserts (I have a few favorites to choose between) and it tastes almost like ice cream, only much, much more.
Serves 4
4 egg yolks
0.3 cup powdered sugar
0.4 cup concentrated orange juice
0.8 cup heavy cream
Beat egg yolks and sugar until White and fluffy. Add the concentrated orange juice into the batter. Beat the cream until hard and gently fold it into the orange batter. Pour in a bowl or in an ice cream maker (I Always use my ice cream maker and am so grateful for it) and put in the freezer for about 4 hours, in the ice cream maker for about 20 to 30 minutes (at least that is the normal time when I make it).
Leave the parfait in room temperature for 30 minutes before serving with a fruit salad or fresh, sliced fruit.
