CHERRY TIRAMISÚ
Körsbärstiramisú
Prepare the day before, as this dessert should be stored in the fridge overnight to reach that extra special, superb taste and texture.
Serves 4 to 6
4 egg yolks
1 lb mascarpone cheese
1 egg white
0.2 cup sugar
1 lb fresh or frozen cherries or sweet cherries
12 savoiardi biscuits
3/4 cup cherry wine, approx 15% alcohol
For serving:
2 tablespoons flaked almonds
2 tablespoons chopped dark chocolate
Beat egg yolks and mascarpone with an electric beater until it's creamy. Beat egg white and sugar until stiff and foamy, then gently fold it into the mascarpone crème.
Pit ½ lb of the cherries. Turn the biscuits over in the cherry wine. Alternate biscuits, mascarpone crème and cherries in the bowl or bowls and store in the fridge overnight.
When serving, decorate with fresh cherries, flaked almonds and chopped chocolate and why not a small glass of cherry wine?
