Fillet of Pork with Cheese and Mustard Sauce - Fläskfilé i ost- och senapssås

FILLET OF PORK WITH CHEESE AND MUSTARD SAUCE
Fläskfilé i ost- och senapssås

Serves 4

1 1/3 lbs fillet of pork, trimmed and nice
1 onion
1 garlic clove
a mixture of butter and rapeseed oil (we
can buy it in bottles in Sweden)
3/4 teaspoon salt
some black pepper
1 cup cream, approx 15% fat
0.4 cup dry white wine
1 tablespoon flour
2 tablespoons concentrated veal fond
1 tablespoon Dijon mustard
0.4 cup grated, ripe cheese


Slice the meat. Peel and finely chop onion and garlic. Brown the meat in the fat and flavor with salt and black pepper. Beat cream, wine, onions, flour, veal fond and mustard in a pot and bring to a boil while beating. Transfer the meat to the pot and boil in the sauce for 3 to 5 minutes. Remove pot from heat and stir the cheese in. Sprinkle with chopped parsley.

Serve with e.g. boiled rice and vegetables.
