STRAWBERRY SURPRISE

Almost all of us are fond of desserts. I'm sure this one will be popular if you serve the delicious crème as a festive surprise after Sunday dinner (or really, anytime …).
Serves 6 - 8
4 gelatin sheets = 2 teaspoons powdered gelatin
1/3 cup hazelnuts
2 egg yolks
0.2 cup sugar
2 cups strawberries
2 egg whites
3/4 cup heavy cream
0.2 cup red wine
Soak the gelatin sheets in cold water for about 10 minutes. Coarsely chop the nuts. Beat egg yolks and sugar until light and fluffy.
Rinse and trim the berries (I never do the other way around, as most berries are rather hollow and lose a lot of taste if they are trimmed before rinsing). Reserve a couple of berries for decoration and mash the rest. Beat the egg whites until stiff and also beat the cream. Stir the mashed berries into the egg batter and gently fold in the cream and egg whites. Add nuts and red wine.
Take up the gelatin and squeeze out the liquid. Melt them in a saucepan on low heat and gently pour the gelatin into the crème. Pour into a bowl and store cold until the crème has set. Decorate with sliced strawberries before serving.
