TWANGY LENTIL STEW
Fina linsgrytan med sting

If chili makes your mouth burn, milk and yogurt soothes a bit. Don't drink water as it will increase the heat.

1 red chili (optional)
1 onion
3 garlic cloves
2 plum tomatoes
2 tablespoons olive oil
0.8 cup red lentils
2.8 oz fresh spinach
a little turmeric
0.8 cup coconut milk
2 cups vegetable bouillon
0.4 cup jasmin rice
salt, pepper

Decoration:
chili
coriander


Split the optional chili lengthwise and scrape out the seeds. Cut chili, onions and garlic in thin slices. Cut the tomatoes in wedges and skin them with a sharp knife. Heat the oil in a saucepan and sizzle all vegetables lightly. Add remaining ingredients and let the stew simmer for about 15 minutes. Flavor to taste with salt and pepper.

Decorate with some thinly sliced chili and fresh coriander, if you wish.
