LEMON YOGURT FROMAGE
Citronfromage med yoghurt
Lemon fromage is a fresh and simple dessert, liked by most people. You can very well make it the day before serving.
Serves 4
4 gelatin sheets = 2 teaspoons powdered gelatin
zest and juice from 3 lemons
0.2 cup sugar
a little vanilla powder
2 eggs
3/4 cup plain yogurt, 10% fat or the like
Decoration:
powdered sugar
fresh berries if you wish
Soak the gelatin in cold water for at least 5 minutes. Bring lemon zest and juice to a boil with the sugar until the sugar has dissolved. Strain off the zest. Take up the gelatin and squeeze out the water, then beat them into the lemon mixture together with the vanilla powder. Allow to cool.
Separate egg yolks and whites. Beat the whites until stiff and gently mix it into the yogurt. Stir in one egg yolk at a time. Add the lemon-sugar mixture and stir until well blended. Divide into 4 serving glasses and store cold for at least 6 hours, but preferably overnight.
Decorate with powdered sugar and perhaps fresh berries.
