Refreshing Apple Punch - Läskande äppelbål

REFRESHING APPLE PUNCH
Läskande äppelbål

A fresh-tasting punch are good for many occasions, and enjoying a glass of punch in a garden somewhere in the summer is heaven. Before serving, you can add some ice cubes if you wish. I normally want lots of ice in my punch.

Makes 6 cups

2 apples
1½ lemon
6 cups apple juice or cider
some whole cloves


Rinse apples and lemons well and wipe them dry.

Slice the apples and ½ lemon in leafy-thin slices. Put them in a large bowl. Squeeze out the juice from the whole lemon. Pour lemon juice and apple juice in the bowl and add cloves. Store cold before serving. 

When serving you can add some berries in the bowl.

Mango-Raspberry Smoothie - Mango- och hallonsmoothie

MANGO-RASPBERRY SMOOTHIE
Mango- och hallonsmoothie

Approx 5 glasses

1.6 cup frozen mango
1.6 cup frozen raspberries
0.4 cup mango juice
0.1 cup "runny" honey
1 teaspoon crushed cardamom
3.2 cups vanilla yogurt


Half-thaw mango and raspberries, then puré them. Add remaining ingredients and mix for a short while until smooth. Serve.

Raspberry Punch - Hallonbål

RASPBERRY PUNCH
Hallonbål

When days are hot you need lots of drink. This punch is festive and delicious. 

Makes approx 8 cups

2 cups fresh raspberries
2 cups concentrated raspberry drink
2 cups water
2 cups Swedish Fruktsoda or Sockerdricka
or 7-Up or Sprite, or sparkling water
ice cubes
some grated orange zest or some fresh mint leaves


Rinse and trim the raspberries. Mix concentrated drink and water and quickly add soda or sparkling water. Add raspberries and lots of ice and sprinkle with fruit zest or mint leaves.

Serve right away.

Carrot Sunshine

CARROT SUNSHINE

Orange and carrot is a colorful, delicious combo which gets an extra butt kick by the ginger.

Approx 2 cups

1 lb carrots
4 oranges
1 piece fresh ginger, approx 1 inch


Rinse and scrub the carrots and cut them up roughly. Peel the oranges and do the same with them. Squeeze the carrots and oranges in a juicer. Peel and grate the ginger. Mix it into the juice, pour it up and serve.

Berry Boost Watermelon

BERRY BOOST WATERMELON

Use really ripe strawberries and watermelon for the best taste. Peel the cucumber or the juice will turn brown.

Approx 6 cups

3 lbs watermelon
½ cucumber
4 cups fresh strawberries
ice


Peel and remove the pips from the melon and cut it in wedges. Save a small wedge and cut it in pieces for decoration. Cut some thin slices of the cucumber for decoration, peel the rest and cut it in pieces. Trim and split the strawberries, but save some for decoration.

Squeeze out the juice from melon, cucumber and strawberries in a juicer. Alternate melon pieces, sliced cucumber and strawberries in a large bowl, can or jug and add lots of ice. Pour in the juice and serve.

Orange Ginger Smoothie - Apelsinsmoothie med ingefära

ORANGE GINGER SMOOTHIE
Apelsinsmoothie med ingefära

1 glass

1 orange
½ lime
½ teaspoon grated fresh ginger
0.4 cup vanilla yogurt
0.2 cup fresh orange juice


Peel the orange and cut out skinless wedges. Squeeze out the lime juice. Mix orange wedges and lime juice with remaining ingredients to a foamy smoothie. Put in the fridge for about 15 minutes if you want it really cold, or drink it right away if you can't wait.

Café Liègeois - Kaffe från Liège

CAFÉ LIÈGEOIS
Kaffe från Liège

A Belgian classic. If you wish, substitute with hot chocolate instead.

Serves 4

1 teaspoon vanilla sugar
1 tablespoon powdered sugar
0.4 cup heavy cream
2.4 cups coffee, well chilled, e.g. espresso
1 cup vanilla ice cream
1 tablespoon cocoa

For decoration:
4 chocolate wafers or the like


Stir vanilla sugar and powdered sugar into the cream and beat until rather stiff. Pour the coffee in 4 glasses and spoon the ice cream and whipped cream into the coffee. Dust with cocoa and decorate with a wafer.

Lime-Ginger Drink - Lime- och ingefärsdricka

LIME-GINGER DRINK
Lime- och ingefärsdricka

Ginger is chock full of good stuff and is heavenly together with lime. Serve as a cool drink on a hot summer day or as a non-alcoholic alternative at the party - or the other way around, or both, or … !

4 glasses

Juice from a piece of fresh ginger, about 2.8 inches
juice and wedges from 2 limes
juice and slices from 1 lemon
1 to 2 tablespoons brown sugar
3.2 cups ginger ale
ice


Peel and finely grate the ginger. Squeeze out the juice in a glass. Split lemon and limes and save some lemon slices and lime wedges for decoration. Squeeze the rest. Mix the ginger juice with the fruit juice and brown sugar. Stir until the sugar has dissolved. Divide into 4 glasses. Add ice, fill upp the glasses with ginger ale and stir gently. Decorate with lime and lemon.

Rhubarb Slush - Rabarberslush

RHUBARB SLUSH
Rabarberslush

If you want the slush to be really red, add some grenadine.

4 glasses

8.8 oz rhubarbs
2 cups water
0.6 cup sugar
1 tablespoon fresh lemon juice
1 teaspoon vanilla sugar
1 tablespoon grenadine (optional, see above)


Cut the rhubarb in smaller pieces and put them in a saucepan. Add water and sugar, heat up and boil until almost mushy. Strain into a bowl and allow the liquid to cool. Add lemon juice, vanilla sugar and optional grenadine to the cold liquid.

Put this in the freezer for a few hours, but take out now and then and beat until fluffy. You can also freeze the liquid completely and take it out a while before serving, then beat until fluffy.

Pour the slush in glasses and serve right away.

Strawberry Chocolate Latte - Jordgubbs- och chokladlatte

STRAWBERRY CHOCOLATE LATTE
Jordgubbs- och chokladlatte

Serves 1

Espresso or other strong coffee
5 strawberries
0.8 cup milk
½ tablespoon cocoa
sugar to taste


Make the coffee. Mash the strawberries with the sugar. Mix coffee, milk, cocoa and ice in a mixer or use a hand shaker. Add the mashed strawberries, mix again and serve straight up in glasses. 

You get a child-friendly version if you just omit the coffee.

Cold Coffee Cinnamon Drink - Kall kaffedrink med kanel

COLD COFFEE CINNAMON DRINK
Kall kaffedrink med kanel

Serves 1

0.6 cup cold coffee
2½ tablespoons brown sugar
4 ice cubes
½ teaspoon cinnamon
0.6 cup whipped cream


Put all ingredients in a food processor or mixer and blend well. If you want alcohol in the drink, you can add 2 tablespoons light rum.

Raspberry Ginger Drink - Hallon- och ingefärsdricka

RASPBERRY GINGER DRINK 
Hallon- och ingefärsdricka

A perfect mix of soft drink and more grownup drink. If there are children present you can take a little less ginger. Keep in mind that it can be very different in taste from time to time, so "feel your way"!

Makes approx 8 cups

1.1 lb raspberries
2 tablespoons + 0.2 cup water
1/4 inch fresh ginger
1.2 cups sugar
4 cups ginger ale
2 tablespoons fresh lemon juice

For serving:
raspberries
lots of ice


Put the raspberries in a saucepan and add 2 tablespoons water. Boil on low heat until the berries are mushy. Push them through a sieve. Peel and finely shred the ginger. Bring sugar, 0.2 cup water and ginger to a boil, then remove and leave for 10 minutes. Strain off the ginger.

Mix the raspberry juice with the sugary liquid in a bottle and put in the fridge. Mix with ginger ale and lemon juice just Before serving with whole raspberries and lots of ice in each glass.

BREAKFAST DRINK WITH FRUIT AND YOGURT
Frukostdrink med frukt och yoghurt

Sometimes you just don't have the appetite, or enough time, for a proper breakfast. Then this drink with fruit juice, yogurt and wheat germs gives you what you need to start off the day in a good way. 

4 glasses

2 oranges
1 to 2 red grapefruits
1 large banana
1.6 cups plain yogurt
4 tablespoons wheat germs


Split oranges and red grapefruits. Cut 2 slices orange for decoration, split them and set aside. Juice the fruits - you'll need approx 1.6 cups juice for these drinks. Pour the juice in a mixer or food processor. Peel the banana, slice it into the fruit juice and mix to a smooth purée. Add yogurt and mix really well. Add wheat germs and mix quickly until well blended.

Pour into large glasses and attach the orange slices on the edge. Serve with a straw as breakfast or with brunch.

You can change the drink according to taste and season. You can use only grapefruit and banana or only orange and banana. Instead of citrus fruits you can use mango or papaya, and you can substitute wheat germs with oats or oat bran. If you're in a hurry you can also use bottled orange juice of course. And, best of all, you can mix the drink in the evening and store in the fridge until the morning. Stir well Before serving.

Fruit drinks for the frozen - Fruktdrinkar för frusna

FRUIT DRINKS FOR THE FREEZING
Fruktdrycker för frusna

To warm up with a good drink when you’re freezing is wonderful. Try a glass of orange tea or a warm pineapple drink!

4 glasses of each

Orange tea

1 orange
3 ¼ cups water
4 whole cloves
½ cinnamon stick
3 tea bags
3 to 4 tablespoons honey

Decoration:
orange slices

Pineapple drink:

zest and juice from ½ lemon
zest and juice from ½ lime
3 ¼ cups pineapple-orange juice
2 tablespoons honey
grated nutmeg if desired

Decoration:
sliced lime
fresh mint or lemon balm

Orange tea:

Thinly peel the orange and cut the peel in thin shreds. Squeeze the juice from the orange. Mix water, cloves and cinnamon stick in a saucepan. Add orange peel and tea bags and heat to boiling point. Take up the tea bags and blend in orange juice and honey. Strain away the spices and fruit peel and pour the drink in glasses. Decorate with orange slices and serve.

Pineapple drink:

Peel lemon and lime very thinly and cut the peel in thin shreds. Squeeze the juice from the fruits. Mix pineapple-orange juice, honey and fruit peel in a saucepan and heat to boiling point. Strain away the fruit peel, blend in the fruit juices and flavour with grated nutmeg if desired. Pour in glasses and decorate with sliced lime and mint or lemon balm.

VITAMIN DRINKS
Vitamindrinkar

Delicious and healthy drinks for breakfast, lunch or as a refreshing in-between snack.

1 glass of each

CARROT DRINK
Morotsdrink

½ apple
2/3 cup carrot juice
juice from ½ orange
a sprig of the carrot leaves
or parsley for decoration

TUTTI FRUTTI DRINK

1 kiwifruit
¼ mango
1/3 cup apple juice
1 teaspoon fresh lemon juice
a piece of mango or kiwi
for decoration

VEGETABLE DRINK
Grönsaksdrink

1/3 cup vegetable juice
1/3 cup pineapple and orange juice
1 tablespoon chopped parsley
1 teaspoon fresh lemon juice
cucumber or lemon slices
for decoration

Carrot drink

Peel, core and cut the apple in pieces. Mix apple, carrot juice and orange juice in a mixer or food processor. Mix until the apple is finely chopped. Pour the drink in a glass, decorate and serve.

Tuttifrutti drink

Peel kiwi and mango and cut them in pieces. Finely chop the fruit in a mixer or food processor and pour in a glass. Fill up with apple juice and flavour to taste with lemon juice. Decorate with a piece of fruit and serve.

Vegetable drink

Mix vegetable juice, pineapple-orange juice and parsley. Flavour to taste with lemon juice. Pour in a glass, decorate and serve.

Tropical milkshake - Tropisk milkshake

TROPICAL MILKSHAKE
Tropisk milkshake

These lovely, creamy milkshakes are filled with fruit and ice cream. Can you resist them?

4 glasses

1 ripe mango
2 bananas
4 cups vanilla ice cream
1 cup milk
2 passionfruits

Dress a tray with baking paper.

Split the mango and scoop out the pulp. Try to cut off as much of the pulp as possible. Peel the bananas. Put mango and bananas on the tray and put in the freezer for about 30 minutes, but do not freeze it.

Put ice cream and milk in a food processor or mixer and process until smooth. Add mango and banana and mix well. Scoop out the passionfruits and put the pulp in the mixer. Quickly mix until everything is well blended. Pour the milkshake into 4 chilled glasses, add straws and serve immediately.

It’s important that the mangoes are ripe for this recipe.

Peach raspberry frappé - Persiko- och hallonfrappé

PEACH RASPBERRY FRAPPÉ
Persiko- och hallonfrappé

This delicious, cooling frappé is sweet from ripe peaches and juicy raspberries.

4 glasses

2 skinned peaches
1/3 cup fresh or frozen raspberries
+ some extra for decoration
1 cup milk
1/3 cup fresh orange juice
1 cup vanilla ice cream

Cut away the peach pulp from the stone. Slice the pulp and reserve 4 slices for decoration and put the rest in a bowl together with the raspberries. Put the bowl in the freezer for about 30 minutes. Also chill 4 serving glasses in the freezer.

Put peaches and raspberries in a mixer or food processor and add milk, orange juice and ice cream. Process until smooth. Pour the frappe in the chilled glasses. Serve each glass decorated with raspberries and a slice or wedge of peach. Serve immediately, these drinks are best as cold as ever possible.

You can use canned peaches instead of fresh. Make sure you drain them well before serving. You can also use nectarines.

Vanilla frappé - Vaniljfrappé

VANILLA FRAPPÉ
Vaniljfrappé

This chilled, low-fat coffee drink is easy to make and perfect as a fast and delicious dessert.

4 glasses

2 teaspoons cocoa
1/3 cup lukewarm, strong coffee
2 tablespoons brown sugar
4 cups milk
2 cups vanilla ice cream
1 tablespoon grated dark chocolate

Mix cocoa, coffee and brown sugar in a bowl and stir until the sugar has melted. Let cool completely. Make sure the milk is taken straight from the fridge and also that the serving glasses are cold.

Pour milk and ice cream in a mixer or food processor and blend well. Add the coffee mixture and process until everything is well blended and has a good drink consistency.

Pour the coffee drink in the cold glasses and sprinkle with grated dark chocolate just before serving.

Peach raspberry smoothie - Persika- och hallonsmoothie

PEACH RASPBERRY SMOOTHIE
Persika- och hallonsmoothie

These refreshing, filling drinks with the taste of summer are healthy and low in calories. At least in my opinion!

4 drinks

2 peaches + some slices for decoration
1 banana
2 cups plain yogurt
1 cup milk
1 cup fresh or frozen raspberries
+ some extra for decoration
3 tablespoons honey

Split the peaches, take out the stone and cut the halves in thin slices. Put them on a tray and put them in the freezer for 30 minutes. If you use fresh raspberries, freeze them together with the peaches.

Mix yogurt and milk and put that in the freezer as well. Freeze until ice cold but not frozen. Peel the banana and cut in pieces. Pour the yogurt mixture in a blender, add peach slices, raspberries, banana pieces and honey and mix until the ingredients are well blended and fairly smooth. It’s best if it still contains some pieces of fruit.

Pour the drinks in chilled glasses and decorate with peach slices and raspberries.

Sunshine shake - Solskensshake

SUNSHINE SHAKE
Solskensshake

This quick shake with fresh orange juice, banana and passionfruit tastes like summer through a straw … it’s so good.

4 glasses

2 cups fresh orange juice
1 cup plain yogurt
1/3 cup wholemeal cereal (?)
2 bananas
3 tablespoons pulp from passionfruit
2 tablespoons honey

Put orange juice, yogurt, bananas and passionfruit in the fridge for about 30 minutes before making the shakes.

Mix orange juice and yogurt in a mixer or food processor and process for a few seconds. Add cereal and mix until smooth. Peel the bananas and slice them down right into the mixer, so that they don’t get brown, and mix until smooth. Add passionfruit and honey and mix until well blended. Pour into 4 glasses, add the straws and serve.

This shake gets even more summery in taste if you add a couple of strawberries as well.
