Balkan bell pepper stew - Paprikagryta från Balkan (retro)

BALKAN BELL PEPPER STEW
Paprikagryta från Balkan

4 servings

2 to 3 onions
2 red and 2 green bell peppers
1 garlic clove
1 aubergine
1 fillet of pork
3½ oz bacon
1 tablespoon butter or margarine
salt, coarsely ground black pepper
paprika


Peel the onion and cut in slices. Finely chop or crush the garlic. Trim and shred the sweet peppers. Peel the aubergine and cut in fine shreds or dice. Cut the bacon in shreds and sautée them together with onions and sweet peppers for about 10 minutes. Add some extra fat if necessary.

Add the diced aubergine and pour on 1/3 cup water or bouillon. Cut the meat in slices or shreds and fry them in some butter or margarine. Flavour with salt, pepper and paprika. Flavour the vegetables with some salt and pepper and put it on a warm serving plate with the meat in the middle.

Serve with rice.
