MUSHROOM TOMATO CHICKEN
Kyckling i tomat med svamp
1 tablespoon butter or margarine
1 tablespoon cooking oil
2 to 3 carrots in slices
7 oz diced bacon
1 tablespoon flour
¼ cup tomato paste
¾ cup white cooking wine
¾ cup bouillon
1 to 2 garlic cloves
salt, white pepper
paprika
thyme
½ lb mushrooms or chanterelles,
fresh or canned
1 bunch parsley
Thaw the chickens if frozen. Cut them in pieces. Sauté onions, carrots and bacon for 6 to 8 minutes in butter or margarine and oil in a pot. Take it up, then brown the chicken pieces well on all sides. Sprinkle with flour and put veggies and bacon back in the pot.

Flavour to taste with salt, pepper, paprika and
thyme and add tomato purée, wine and bouillon. Cover with a lid and boil
slowly. Add the mushrooms when 5 minutes remain. If needed, flavour some more
and sprinkle with chopped parsley.
Serve with potatoes (or mashed potatoes) and a
salad. Boiled rice is another alternative. :-D
