CALVADOS APPLES
Calvadosäpplen

This is an excellent, most delicious recipe – calvados apples. A real grown-up dessert with interesting, luxurious, deep tastes.

2 servings

2 large apples, e.g. Gravensteiner
1 tablespoon butter or margarine
3 tablespoons Demerara sugar
2 tablespoons Calvados
¼ cup coarsely chopped walnuts
1/3 to 2/3 cup crème fraîche or soured cream


Heat the oven to 480F and with the grill on.

Peel and cut the apples in wedges and fry them in the fat in a frying pan. Sprinkle with 2/3 of the Demerara after a minute or so in the  pan. Add the calvados and let the apples simmer slowly until tender but not mushy.

Transfer the apples (gently) to oven-proof dishes or glasses. Sprinkle with walnuts and spread the crème fraîche on top. Finish with remaining Demerara. Bake in the oven until the sugar has started to melt, about 5 minutes.
