FUDGE-FILLED LEMON MUFFINS
Kolafyllda citronmuffins
grated zest from ½ to 1 lemon
2 eggs
1 ¼ cups flour
2 teaspoons baking powder
1/3 cup soured cream
12 Toffifees (fudge-filled chocolate)
flaked coconut
Heat the oven to 395F.

If you don’t want such a
strong taste of the filling, you’ll do with the lemon curd before baking and a Toffifee
melting on the top after baking.
Approx 12 muffins
4 oz soft butter or
margarine
1 cup sugargrated zest from ½ to 1 lemon
2 eggs
1 ¼ cups flour
2 teaspoons baking powder
1/3 cup soured cream
Filling:
2 tablespoons lemon curd12 Toffifees (fudge-filled chocolate)
Decoration:
approx 12 Toffifeesflaked coconut
Heat the oven to 395F.
Stir fat and sugar until
fluffy. Add lemon and one egg at a time while beating. Mix flour and
baking
powder and stir it into the batter together with the soured cream. Fill the
batter into paper muffin tins to only just ¾.
Put a dab of lemon curd and
a Toffifee on each muffin. Bake in the middle of the oven for about 15 to 18
minutes. Let another Toffifee melt on each muffin right when taking them out of
the oven. Decorate with flaked coconut.
