Pie with apricot cream - Paj med aprikosgrädde (retro)

PIE WITH APRICOT CREAM
Paj med aprikosgrädde

Serves 6

1 cup finely crumbled ginger biscuits
3½ oz butter or margarine

Filling:
1 can apricot halves, 14 oz
2/3 cup lightly sweetened apple sauce
2 gelatin sheets = 1 teaspoon powdered gelatin
2 tablespoons hot water
¾ cup whipped cream
¼ cup sugar

Decoration:
peach wedges
whipped cream
toasted almonds


Melt the fat and fry the crumbled biscuits for a while. Dress the bottom and walls of a shallow baking pan with the crumbles. Reserve a couple of apricot halves for decoration and mix the rest. Blend with apple sauce and dilute with the apricot juice, so that you have in all 2 cups fruit purée.

Melt the gelatin in the hot water and stir this into the mashed fruit. Add the whipped cream and maybe some more sugar if needed. Pour this in the baking pan and store cold until it has set. Decorate with fruit, cream and almonds for serving.
