WHITE CHOCOLATE CAKE
Mjuk kaka med vit choklad
This cake is soft and juicy and topped with a silky cover of cream and white chocolate.
1 cake, 8 to 10 pieces
2 eggs
¾ cup sugar
2½ oz melted butter or margarine
1/3 cup milk
1 ¼ cups flour
2 teaspoons baking powder
2 teaspoons vanilla sugar
Topping:
¼ to 1/3 cup heavy cream
3½ oz white chocolate
Beat eggs and sugar until fluffy. Stir in the melted fat alternating with milk. Mix all dry ingredients and sift this in while stirring. Pour the batter in a greased, oven-proof baking pan, holding 6 cups. Bake at 350F for about 40 minutes – try with a skewer which should come out dry as this is not one of my darling sticky cakes. Leave for a while, then unmould.
Bring the cream to a boil and remove from heat. Stir in the chocolate and stir until melted. Store cold to set. If you want it fluffier, use an electric beater.
Decorate the cake with whipped chocolate cream.
