BLACKBERRY SQUARES WITH NUT MERINGUE
Björnbärsrutor med nötmaräng

 Lovely squares, a bit sticky, very easy to make in a roasting pan. You make them in 30 minutes.

Approx 30 squares

Layer:
3½ oz butter or margarine
¾ cup sugar
3 eggs
2/3 cup flour
3 tablespoons cocoa
2 teaspoons vanilla sugar

Nut meringue:
2 large egg whites
1/3 cup sugar
1 ¾ to 2½ oz coarsely chopped nuts

Decoration:
blackberries


Stir fat and sugar until fluffy and add the eggs, one by one. Mix flour with cocoa and vanilla sugar and sift this in while stirring until the batter is smooth. Spread it out in a pan dressed with baking paper, approx 8 x 12 inches.

Beat the egg whites until stiff and add the sugar, little by little, while beating to a stiff, glossy mixture. Turn in the nuts and dab the meringue over the chocolate batter. Smoothen it out carefully and gently.

Bake at 390F for 15 to 20 minutes. Cut in squares and decorate with blackberries (or any other berry you prefer). Serve with whipped cream.
