MILK CHOCOLATE CAKE WITH BLUEBERRIES

¾ cup Demerara sugar
¾ cup flour
¼ cup cocoa
1 teaspoon vanilla sugar
1 egg yolk
1 ¼ cups heavy cream
¾ cups blueberries
Heat the oven to 390F.

This cake freezes well and can be
served half-thawed. In that case, sprinkle with the berries before serving.
1 cake, 8 to 10 pieces
3½ oz butter or margarine
2 eggs¾ cup Demerara sugar
¾ cup flour
¼ cup cocoa
1 teaspoon vanilla sugar
Chocolate mousse:
7 oz milk chocolate1 egg yolk
1 ¼ cups heavy cream
¾ cups blueberries
Heat the oven to 390F.
Melt the fat in a saucepan. Beat
eggs and Demerara until fluffy, then add the melted fat. Mix flour, cocoa and
vanilla sugar and turn into the egg batter. Pour in a greased oven-proof baking
pan, diameter approx 22 cm/9 inches, and bake for about 15 minutes. Allow to
cool completely.
Chop the milk chocolate and melt
over a waterbath. Stir in the egg yolk when the chocolate has cooled a little.
Beat the cream and turn it into the cool chocolate. Spread the crème on top of
the cake and sprinkle with blueberries. Put in the fridge for a couple of hours.
