PORK CHOPS IN THE OVEN

½ teaspoon rosemary
4 apples
4 small, parboiled onions
4 skinned tomatoes
soy sauce
water or bouillon
Quickly brown the pork chops on both sides in a hot frying pan. Flavour with salt, white pepper and some rosemary – a good spice with pork. Transfer the chops to an oven-proof dish together with the cored, but not peeled, apples – choose a fresh, sharp apple for the best taste. Also add the small, peeled, parboiled onions and skinned tomatoes.

Why not combine pork chops with onions, apples and
tomatoes and let it all simmer in the oven for a while? The chops become really
tender.

Whisk out the frying pan with some boiling water or
bouillon and pour the juice over the chops. Heat the oven to 440F and fry
for about 35 minutes. Dilute with some more bouillon or water if it seems dry.
Serve with potatoes or boiled rice. In Sweden in the
70s you sprinkled everything with parsley – you do as you choose. :-D
