Veal stew with a zest - Kalvgryta med piff (retro)

VEAL STEW WITH A ZEST
Kalvgryta med piff

4 servings

1 lb 3½ oz brisket of veal
1 tablespoon butter or margarine
1 teaspoon salt
½ teaspoon paprika
black pepper
1/3 cup long-grained rice
approx 2 cups water
3½ oz bacon
1 small piece processed cheese
1 green or red bell pepper


Cut the meat in approx 1 inch pieces. Brown the meat in some fat (and even the bone if there is one). Add spices, rice and boiling water. Cover with a lid and let it all simmer for a short while. Cut the bacon in pieces and dice the cheese and add this to the pot. Simmer for another 20 to 30 minutes. Make sure it doesn’t stick to the bottom.

Flavour to taste – this casserole should be hearty and flavourful. Serve decorated with shredded red or green bell pepper.
