Lightly sweetened strawberry "kräm" - Lättsockrad jordgubbskräm

LIGHTLY SWEETENED STRAWBERRY “KRÄM”
Lättsockrad jordgubbskräm

4 servings

1 to 2 rhubarbs
10 oz strawberries, fresh are best
1 ¾ cups water
2 tablespoons stevia
2 tablespoons potato starch


Rinse and trim the rhubarbs if needed. Cut them in pieces. Trim and slice the berries. Bring water and stevia to a boil, add the rhubarbs and boil, covered, for about 5 minutes. Add the strawberries.

Stir the potato starch with some cold water and stir this into the saucepan. Quickly bring to a boil, then remove from heat. Decorate with fresh berries if you wish.
