The scrumptious bun - Goda bullen (retro)

THE SCRUMPTIOUS BUN
Goda bullen

16 to 20 buns

1 ¾ oz fresh yeast
1 cup regular milk
1 egg
1 tablespoon sugar
approx 4 cups flour
1 teaspoon salt
3½ oz butter or margarine
1 egg for brushing

Filling and decoration:
2 to 3 apples
ground cinnamon
sugar


Heat the milk to about body heat. Stir the yeast in some of the lukewarm milk. Beat egg and sugar well. Mix flour and salt in a mixing bowl, add the fat in pieces and add milk, yeast and egg/sugar mixture. Work the dough until smooth and let rise until double in size.

Divide the dough in two. Roll out one piece and cut it in 8 to 10 squares. Fill with thin apple wedges, sprinkle with cinnamon and sugar and fold the dough over the filling to make round buns. Put them “seamside down” on a greased baking plate (or put baking paper on the plate) and let rise.

Brush the buns with beaten egg, sprinkle with some sugar and cinnamon and bake in the middle of the oven at 440F for 10 to 12 minutes. Repeat the process with the second part of the dough, fill, bake out, let rise, brush with egg and bake until nicely golden.
