Cheese-baked cabbage - Ostgratinerad vitkål (retro)

CHEESE-BAKED CABBAGE
Ostgratinerad vitkål


4 servings


1 small head of green cabbage
water, salt
butter or margarine
1 ¼ cups grated cheese, rather mild
in taste and not too little fat
8 slices boiled ham
2/3 cup crème fraîche or soured cream
3 tablespoons cream
1 egg yolk
salt, white pepper




Trim the cabbage, cut in 4 wedges and cut out the stem. Cut each wedge in a couple of pieces and boil in lightly salted water. Drain. Grease an oven-proof dish and sprinkle with a thin layer of cheese. Put in half of the cabbage and top with some cheese. Roll the sliced ham and put them on top, then remaining cabbage and cheese.


Mix the soured cream with cream and egg yolk, flavour to taste and pour this in the dish. Add some butter or margarine in dabs and also remaining cheese. Bake in the middle part of the oven at 440F and serve with bread.
