Wafer cake - Våffeltårta

WAFER CAKE
Våffeltårta

On March 25th we celebrated Waffle Day in Sweden. On this day, this creation is popular.

BASIC RECIPE FOR WAFFLES
Grundrecept våfflor

6 to 8 waffles

3½ oz butter or margarine
1 ¼ cup flour
salt
1 to 2 teaspoons baking powder
1/3 cup heavy cream
1 ¼ cups milk

Melt the fat and allow to cool. Mix flour, salt, baking powder, cream and half of the cold milk to a smooth mixture. Add remaining milk and mix in the cooled fat. Grease the waffle iron the first time, pour in some batter and continue baking until waffles are golden. Let cool on a rack if not eaten at once.

PARTY WAFER CAKE
Kalasvåffeltårta

4 to 5 servings

4 to 5 waffles as above

Filling:
1 ¾ cups heavy cream
1/3 to 2/3 cups jam of your choice
2 cups mix of mango, blueberries and raspberries
(mango can well be frozen)

Decoration:
lemon balm or mint
powdered sugar


Make the waffles according to recipe above. Alternate layers of waffles and whipped cream, jam and berries, decorate with lemon balm and sift with powdered sugar.

Enjoy immediately!
