BANANA OAT CAKE
Mjuk banan- och havrekaka
3 eggs
3 bananas
good ¾ cup soured cream
1½ cups flour
1½ teaspoons baking powder
½ teaspoon ground cinnamon
2/3 cup oats
¾ cup chopped hazelnuts or walnuts
approx 2 tablespoons fresh orange juice
Decoration:
chopped nuts or sprinkled chocolate
Stir fat and sugar in a bowl until fluffy. Stir in the eggs, one by one. Mash the bananas and blend them in together with the soured cream. Mix flour, baking powder, cinnamon and vanilla sugar. Stir the flour mixture, oats and nuts into the batter. Drop out the batter in a greased, floured cake pan (Bundt pan), holding 6 cups, and bake in the lower part of the oven at 350F for about 50 minutes.

flavour. Glazed and decorated it’s a festive little gem to put on the coffee
table.

¾ cup powdered sugarapprox 2 tablespoons fresh orange juice

Stir fat and sugar in a bowl until fluffy. Stir in the eggs, one by one. Mash the bananas and blend them in together with the soured cream. Mix flour, baking powder, cinnamon and vanilla sugar. Stir the flour mixture, oats and nuts into the batter. Drop out the batter in a greased, floured cake pan (Bundt pan), holding 6 cups, and bake in the lower part of the oven at 350F for about 50 minutes.
Let the cake cool in the pan for about 15 minutes,
then unmould onto a rack to cool completely.
Mix powdered sugar and orange juice for the glaze
and drizzle it over the cake. Sprinkle with some grated chocolate or chopped
nuts and serve the cake.
