Oatmeal banana cake - Mjuk banan- och havrekaka

BANANA OAT CAKE
Mjuk banan- och havrekaka

Bananas, nuts and oats give this cake its special flavour. Glazed and decorated it’s a festive little gem to put on the coffee table.

1 cake, 16 to 18 pieces

3½ oz butter or margarine
1 cup sugar
3 eggs
3 bananas
good ¾ cup soured cream
1½ cups flour
1½ teaspoons baking powder
½ teaspoon ground cinnamon
2/3 cup oats
¾ cup chopped hazelnuts or walnuts

Glaze:
¾ cup powdered sugar
approx 2 tablespoons fresh orange juice

Decoration:
chopped nuts or sprinkled chocolate


Stir fat and sugar in a bowl until fluffy. Stir in the eggs, one by one. Mash the bananas and blend them in together with the soured cream. Mix flour, baking powder, cinnamon and vanilla sugar. Stir the flour mixture, oats and nuts into the batter. Drop out the batter in a greased, floured cake pan (Bundt pan), holding 6 cups, and bake in the lower part of the oven at 350F for about 50 minutes.

Let the cake cool in the pan for about 15 minutes, then unmould onto a rack to cool completely.

Mix powdered sugar and orange juice for the glaze and drizzle it over the cake. Sprinkle with some grated chocolate or chopped nuts and serve the cake.
