OLD STYLE STRAWBERRY PIE
Gammaldags jordgubbspaj

Make a tempting pie from summer’s lovely strawberries! Frozen berries are also fine to use.

1 pie, approx 8 servings

Pie dough:
1 cup flour
3 tablespoons sugar
3½ oz butter or margarine
2 tablespoons water

Filling:
4 cups fresh strawberries
or 14 oz frozen, thawed berries
¼ to 1/3 cup sugar
1/3 cup water
1½ to 2 tablespoons Maizena

For serving:
whipped cream or vanilla ice Cream


Mix flour and sugar. Cut the fat in pieces. Chop it together with the flour to a crumbly mixture. Add water and quickly work to a dough. Press it out in a pie pan, diameter approx 9 inches, and bake it in the oven at 390 to 440F for 15 to 20 minutes.

Trim the strawberries for the filling and cut them in pieces. Mash half of the berries and put them in a saucepan. Blend in sugar, water and Maizena and boil for a couple of minutes. Allow to cool slightly. Put remaining strawberries in the pie shell and pour the boiled strawberries on top.

Serve the pie with whipped cream or ice cream.
