Vegetable soup with ham - Grönsakssoppa med skinka

VEGETABLE SOUP WITH HAM
Grönsakssoppa med skinka

Let diced cheese melt in the hot soup and serve with croutons flavoured with oregano.

4 servings

½ onion
2 carrots
1 to 2 celery stems
5 oz smoked ham
2 tablespoons butter or margarine
4 cups chicken bouillon
¾ cup green peas or green beans
¼ teaspoon dried thyme
salt, pepper

Croutons:
4 slices white loaf bread
2 tablespoons butter or margarine
½ teaspoon dried oregano

Chop the onion. Cut carrots, celery and ham in pieces. Melt the fat in a saucepan and sizzle onion, carrots and celery for about 5 minutes. Add ham and bouillon and boil the soup on low heat for about 15 minutes.

Dice the bread for the croutons. Melt the fat and add the oregano. Drip the fat over the bread, put it on a baking plate and toast them in the middle of the oven at 200°C/390F for 6 to 8 minutes or until crisp and golden.

Blend the peas or beans into the soup and flavour to taste with thyme, salt and pepper. Boil for a few minutes, flavour to taste again and serve with the croutons and more diced cheese if you wish. You can also flavour the soup with 1 to 2 tablespoons chili sauce.
