Soft orange squares - Mjuka apelsinrutor

SOFT ORANGE SQUARES
Mjuka apelsinrutor

Orange zest and juice give these squares their lovely flavour. Make double batches and try flavouring one of them with lemon instead of orange.

12 to 14 squares

3½ oz butter or margarine
2 tablespoons honey
3 tablespoons treacle/molasses
2/3 cup brown sugar
2 tablespoons flour
grated zest from 2 oranges
2 tablespoons fresh orange juice
2 cups oatmeal

Melt the fat in a saucepan and allow to cool slightly. Blend in honey, treacle/molasses, sugar, flour, orange zest and juice and stir in the oatmeal. Pour the batter in a greased, floured baking pan, approx 8 x 8 inches, and bake in the middle of the oven at 350F for 20 to 25 minutes.

Cut the cake in squares while it’s still warm. Allow to cool in the pan and then transfer to a rack to cool completely.
