CHICKEN IN BELL PEPPER SAUCE
Kyckling i paprikasås
The most common accompaniment with chicken is boiled rice or some kind of potatoes. Here I serve it with buttered noodles (tagliatelle) and a crisp salad.
Serves 4
1 chicken, frozen and thawed
2 onions
2 tablespoons butter or margarine
1 tablespoon paprika
salt, pepper
1 red bell pepper
2 tomatoes
approx 0.4 cup water (if necessary)
1 good tablespoon flour
1 cup soured cream
2 tablespoons cream, 15% fat or the like
Cut the chicken in 8 pieces.
Peel and coarsely chop the onions and sautée it in a shallow saucepan together with paprika. Brown the chicken in the paprika onion. Turn them a couple of times so that they are reddish-brown all around. Flavor with salt and some pepper.
Trim, Dice and add the bell pepper. Skin the tomatoes, cut them in wedges and stir them in. Cover with a lid and simmer on low heat for about 40 minutes. Dilute with water if the chicken looks dry.
Stir the flour with the soured cream. Take up the chicken and keep warm. Pour the soured cream in the saucepan and let the sauce boil for about 5 minutes. Stir until smooth with cream and flavor to taste. Put the chicken back in the saucepan.
Serve with tagliatelle and a green salad.
