OLD-FASHIONED APPLE MERINGUE
Gammaldags äppelmaräng

In olden days people often made lovely desserts by hiding them under a fluffy meringue layer. It's a tradition well worth preserving even nowadays.

Serves 4

5 to 6 apples, approx 1 1/3 lbs
butter or margarine for the pan
0.4 cup grated almond paste
2 egg whites
6 tablespoons sugar
0.4 to 0.8 cup heavy cream


Peel, core and split the apples. Cut in thin wedges and put them in a greased, oven-proof pan. Sprinkle the grated almond paste on top of the apples.

Beat the egg whites until stiff and add sugar gradually while beating. Beat until smooth and glossy. Divide the meringue on top of the apples in small tips and bake in the oven at 300F until the meringue is golden and the apples are tender, about 20 minutes.

Serve slightly cooled with lightly whipped cream.
