CAULIFLOWER FROM THE HERB GARDEN
Kryddgårdens blomkål
When the cauliflower is on sale, few vegetables surpass it. If there's a lot of leaves around it, make sure not to throw them away. They have a lovely taste and are full of vitamins.
Serves 4
2 smaller heads of cauliflower
or 4 really small
water, salt
Sauce:
7 oz celeriac (celery root)
10½ oz mushrooms
4 onions
2 tablespoons butter or margarine
1 teaspoon salt
some black pepper
0.4 cup finely chopped chives
2 teaspoons tarragon
2 teaspoons basil
0.8 cup creamy milk
1 tablespoon flour
0.2 cup low-fat cream cheese
Trim and peel the vegetables. Shred the celeriac rather finely, slice the mushrooms and chop the onions. Melt the fat in a saucepan and add the veggies. Brown very lightly. Add all spices and simmer on low heat. Boil the cauliflower in lightly salted water until only just tender and keep warm.
Sprinkle the flour over the flavored veggies and dilute with creamy milk. When the mix has thickened, you stir in the cheese. Pour this stew around the heads of cauliflower.
Serve with boiled potatoes, preferably new potatoes, and bread. Or with whatever you like.
