GREEN BEANS CAESAR

This dish is a good example that completely vegetarian dishes can be excellent. It's simply green beans mixed with fried onions, root celery and parsley and sprinkled with cheese croutons.
Serves 4
1 lb frozen green beans
3 tablespoons butter
3 tablespoons finely chopped onions
3 tablespoons finely chopped celeriac (celery root)
3 tablespoons finely chopped parsley
2 garlic cloves
½ teaspoon salt
some white pepper
some basil
0.8 cup croutons
3 tablespoons grated, strong cheese
Boil the beans in lightly salted water and drain them. Meanwhile, prepare the other vegetables. Heat the butter in a saucepan and add onions, celeriac and parsley. Let sizzle for a few minutes. Add garlic, salt, pepper and basil.
Toast the croutons in a frying pan. Sprinkle with cheese and let it just stick to the surface. You can add some butter in the frying pan if necessary. Put the beans on a warm serving plate and pour the onion mixture on top. Sprinkle with the cheese croutons and serve immediately.
