Wine Chicken - Vinkyckling

WINE CHICKEN
Vinkyckling

Serves 6

2 grilled chickens
1 finely chopped onion
1 to 2 finely chopped garlic cloves
1 can whole mushrooms, approx 14 oz
2 tablespoons butter or margarine
1 can whole tomatoes, approx 14 oz
2 tablespoons tomato purée
1 bay leaf
1 chicken bouillon cube + liquid from the mushrooms
approx 0.8 cup red or semi-dry white wine
salt, pepper
2 teaspoons arrowroot or potato starch


Sautée onions and mushrooms in the fat in a pot until the onion is tender and the mushrooms are slightly colored. Add garlic, tomato purée, crumbled bay leaf and bouillon cube. Dilute with mushroom liquid and wine, add the tomatoes, cover with a lid and let everything boil for a while.

Meanwhile, cut the chicken in serving-sized pieces and let them simmer in the pot for about 5 minutes until heated through. Thicken with the flour stirred with some cold water. Bring to a boil and flavor to taste.

Serve with bell pepper, cut in rings, and white bread for the sauce.

The ingredients in this stew can easily be substituted. Other things good with chicken is shredded celery, sliced olives, a mixture of peas, corn and bell pepper, and green beans. Serve with boiled rice if you want the dish more filling.
