Strawberry "Kräm" with Meringue Ice Cream - Jordgubbskräm med marängglass

STRAWBERRY "KRÄM" WITH MERINGUE
ICE CREAM
Jordgubbskräm med marängglass

Serves 8

"Kräm":
8 cups strawberries
0.4 cup concentrated elderberry drink

Ice cream:
7 oz white chocolate
4 eggs
0.2 cup sugar
0.8 cup heavy cream
0.8 cup Kesella (Swedish dairy product) or
thick Greek or Turkish plain yogurt
zest and juice from 2 lime fruits
0.8 cup lightly crushed meringues

Decoration:
fresh strawberries
lemon balm


Start with the ice cream. Chop the chocolate and melt it over a waterbath. Separate the eggs. Beat egg yolks and sugar until fluffy. Lightly beat the cream and fold in the Kesella or substitute, lime zest and juice. Add the crushed meringues. Beat the egg whites until stiff and fluffy and fold them into the ice cream batter.

Divide into 8 portion bowls and put in the freezer for at least 4 hours.

"Kräm":
Mix half of the strawberries to a mash together with the elderberry drink. Dice remaining berries and mix with the mash. Save 8 whole berries for decoration.

Pour the "kräm" in deep plates and scoop out the meringue ice cream from the bowls and top the "kräm". Decorate with a strawberry and some lemon balm sprigs.
