STRAWBERRY SOUP WITH VANILLA CREAM
Jordgubbssoppa med vaniljgrädde
Serves 4
6 cups frozen strawberries
2 cups water
0.4 cup sweet wine
0.6 cup sugar
2 lime fruits
Vanilla cream:
0.4 cup heavy cream
1 vanilla pod
Thaw the strawberries. Bring berries, water, wine and sugar and let simmer until the alcohol is gone, then allow to cool. Grate the lime zest and squeeze out the juice. Mix all ingredients to a smooth soup.
Split the vanilla pod and scrape out the seeds. Beat the cream with the seeds. Pour the strawberry soup in bowls and top with the vanilla cream.
