VEGGIE FRITTATA
Frittata med grönsaker
Serves 4
8 eggs
0.6 cup milk
0.2 cup cream
(basil or some other green herb)
1 onion
1 lb mixed vegetables, e.g. asparagus,
broccoli, spinach
2½ oz bacon
1½ tablespoon butter or margarine
8 cherry tomatoes
0.4 cup grated parmesan
parsley
salt, pepper
Heat the oven to 440F. Break the eggs in a bowl and whisk lightly. Beat in milk and cream, flavor to taste with salt and pepper and add some chopped green herbs (that's optional).
Chop the onion and cut the veggies in suitable pieces. Shred the bacon and fry with no fat in a frying pan that later can be put in the oven. Take it up and drain on a paper towel. Sautée onion and veggies in the bacon fat that's left in the pan and some butter or margarine. Split the tomatoes and add to the pan and also put the bacon back.
Pour the egg batter over it all and gently stir inwards until the omelet has set a little but still is very creamy. Sprinkle with grated parmesan. Put the pan in the oven for 5 to 10 minutes and take it out when the frittata when it's risen and nicely colored. Sprinkle with parsley and serve with a green salad.
