LICORICE BRÛLÉE
Lakritsbrûlée
Serves 4
Butter or margarine
0.8 cup heavy cream
0.6 cup milk
0.4 cup sugar
1 tablespoon licorice powder
6 egg yolks
Caramel:
2 tablespoons brown sugar
2 tablespoons sugar
Heat the oven to 212F. Grease 4 oven-proof serving Bowls.
Mix cream, milk, sugar and licorice powder in a saucepan. Heat up but do not boil. Whisk up the egg yolks and stir them into the warm creamy milk. Pour the batter in the bowls and bake in the middle of the oven for 50 to 60 minutes until just set. Take them out and allow to cool completely.
Mix sugar and brown sugar and sprinkle that over the surface in the bowls. Burn with a burner or place them in the upper part of the oven on grill heat, 480F, until nicely colored.
