ASPARAGUS SPINACH BAKE
Sparris- och spenatlåda

This dish can be served as it is, as a fine vegetarian meal, but you can also serve it with meat or fish. With vegetables in the right season it's a really festive meal.

Serves 4

Approx 1 lb fresh spinach
approx 14 oz fresh asparagus
water
2 teaspoons salt per 4 cups water
6 eggs
0.8 cups cream
0.8 cups milk
some white pepper
4 tablespoons strong, ripe, grated cheese


Trim and rinse the spinach. Pre-cook in lightly salted water for a few minutes. Take it up and drain it. Rinse and trim the asparagus, cut in two if needed and pre-cook that too in lightly salted water for about 10 minutes. Take it up and drain it.

Coarsely chop the spinach. Put spinach and asparagus in the bottom of a greased, oven-proof pan.

Beat eggs and creamy milk and flavor with some salt and pepper. Pour this over the veggies and sprinkle with an even layer of grated cheese. Bake at 350F for about 30 minutes or until set and nicely colored.

Serve straight from the pan with a tomato salad, bread and butter.
