Summer "kräm" - Sommarkräm

SUMMER "KRÄM"
Sommarkräm

Serves 6 to 8

4 cups fruit or berries, e.g. blueberries,
raspberries, strawberries, blackberries
and plums
2 to 2.8 cupswater
2 to 3 tablespoons sugar
1 vanilla pod
3 tablespoons potato starch


Trim and rinse the berries and/or fruit. If you use plums they should not have the pits left. Bring water and sugar to a boil. Split the vanilla pod lengthwise and scrape the seeds into the saucepan. Add the empty pod as well as fruit and/or berries and simmer on low heat for at least 5 minutes or until tender.

Take up the vanilla pod and mash the fruit and/or berries. Flavor to taste and add more sugar if necessary.

Stir the potato starch in some cold water, pour the thickening into the saucepan and beat until the "kräm" starts to boil. As soon as you see the first bubble, you remove the saucepan from heat. Let cool completely and serve with ice-cold milk.
