ELIN'S CHOCOLATE MOUSSE

Even though my sister is also called Elin, she's not the creator of this recipe. But I think of her each time I make it!
Serves 8
5½ oz good-quality dark chocolate
3 to 4 teaspoons powdered coffee
0.2 cup fresh orange juice
grated zest from 1 orange
2 eggs
0.8 cup heavy cream
1 to 2 tablespoons brandy or Cointreau (optional)
Melt the chocolate over a waterbath. Heat up the orange juice and dissolve the powdered coffee therein. Add grated zest. Mix the melted chocolate with the coffee-orange liquid and then stir in the egg yolks and fluffy whipped cream. Beat the egg whites properly and fold them into the chocolate mixture.
Pour in nice glasses, cups or Bowls (or in a larger bowl) and store cold for a few hours or longer.
