CHICKEN VEGETABLE STEW

Here's a recipe for an easy-to-make chicken stew. If you choose frozen vegetables or maybe some of the season's first tender ones, it's even faster.
Serves 4
14 oz boneless chicken meat
2 leeks
1 tablespoon butter or margarine
approx 10 oz frozen veggie mix, e.g. peas, corn and bell pepper
1 chicken bouillon cube
water
2 tablespoons finely chopped parsley
Cut the chicken in thin shreds. Rinse, trim and shred the leeks. Brown the meat lightly in some fat in a frying pan. Alternate meat, leek and veggie mix in a pot and add tomatoes with their liquid. Dissolve the bouillon cube in some water and add this as well.
Cover and simmer for 15 to 20 minutes or until everything is tender. Try with a stick. Flavor with more spices if necessary. Sprinkle with parsley and serve straight from the pot with rice, pasta or bread and a salad.
