EGG SAUSAGE PAN
Äggpanna med korv

You can easily make supper for the family from sausage, bacon, eggs and leftover boiled potatoes. A filling everyday dish at a very small cost.

Serves 4

14 oz smoked sausage, e.g. Falu sausage or substitution
(see one of my information text posts)
4 cold, boiled potatoes
4 to 6 slices bacon
3 eggs
0.3 cup milk or cream
1 bunch chives
½ teaspoon salt if needed


Pull the skin off the sausage and slice it. Peel the potatoes and slice them as well. Shred the bacon and fry it together with sausage and potatoes for a few minutes in a frying pan.

Beat eggs and milk or cream. Pour this over the bacon, sausage and potatoes in the frying pan. Bake on low heat until the eggs are set. Sprinkle with chopped chives, add some salt if necessary and serve with a course rye bread.
