FILLED BEEF ROLLS
Rulader med spännande fyllning

Garlic is one of the finest Spices on Earth, according to many people (me included). Don't be afraid to use it - it makes these beef rolls out of this World.

Serves 4

14 oz to 1 lb boneless beef, sliced,
e.g. top side
½ teaspoon salt
some black pepper
1 tablespoon butter or margarine
1.2 cup bouillon or red wine
2 to 3 garlic cloves
0.8 cup heavy cream 
2 tablespoons finely chopped parsley

Filling:
1 can mushrooms, approx 7 oz
1 onion
2 garlic cloves
½ bell pepper
1 tablespoon butter or margarine
1 teaspoon salt
2 tablespoons dried breadcrumbs
1 egg


Start with the filling. Drain the mushrooms. Peel onion and garlic. Rinse the bell pepper and trim carefully. Cut mushrooms, onions, garlic and bell pepper in small pieces or dice. Sautée it all in some fat in a frying pan until all liquid is gone. Flavor with salt and sprinkle with the breadcrumbs. Add the egg while stirring.

Flavor the meat with salt and pepper. Divide the filling on the meat slices, roll up and attach with toothpicks. Brown the rolls well on all sides in fat in the frying pan. Add bouillon or red wine and continue cooking on low heat until the meat is tender.

Peel and chop the garlic cloves. Add them plus the cream and parsley, heat it all through and serve with e.g. baked potatoes and a green salad.
