CARROTS IN CREAM
Morotsslantar i grädde

It's almost unbelievable that such a simple thing as carrots can be so delicious as this Little dish. Some lettuce and a piece of bread is enough to make it a meal, but if you feel like a couple of slices of ham noone is stopping you.

Serves 4

1 1/3 lbs carrots
2 cups water
salt
2 tablespoons butter or margarine
0.4 cup heavy cream
0.8 cup crème fraîche
2 egg yolks
0.2 cup chopped parsley
½ teaspoon salt


Trim, peel and slice the carrots. Boil until barely tender in lightly salted water and pour off the water.

Melt the fat in a large saucepan and add the carrots. Shake and warm them without browning. Beat cream, crème fraîche and egg yolks and stir in parsley and salt. Pour this creamy mixture in the saucepan and blend well. Heat through but do not boil.

Serve the carrots as suggested above or with fish.
