Ham and Vegetable Rice

HAM AND VEGETABLE RICE
Skinkris med grönsaker

For this, you cook everything in the same pan. It's quick too, so you should have food on the table in less than 30 minutes. All ingredients keep well and can be stored at home in the fridge or in the freezer.

Serves 4

1 tablespoon butter or margarine
7 oz smoked, shredded ham
0.4 cup finely chopped onions
1.6 cups long-grained rice
3.3 cups vegetable bouillon
approx 9 oz frozen mix of green peas, corn and red bell pepper
or some other veggie mix you like
0.8 cup diced cheese
½ teaspoon salt

Sauce:
0.8 cup soured cream
0.2 cup chili sauce
½ teaspoon garlic powder
½ teaspoon Italian salad spice
or dried sage


Sautée onions and ham lightly in the fat for a minute or so, without browning. Add rice and dilute with bouillon, flavor with salt, cover and boil for about 20 minutes.

Meanwhile, make the sauce. Let the veggie mix boil with the rice mix for the last 5 minutes. Just before serving, stir in the diced cheese and serve the sauce separately. It's really good with some fresh cucumber.

Mustard Mushroom Falu Sausage - Falukorv med senap och champinjoner

MUSTARD MUSHROOM FALU SAUSAGE
Falukorv med senap och champinjoner

Serves 4

12 rather thick slices Falu sausage or equivalent
(large Frankfurter or Strasbourger sausage)
7 oz fresh mushrooms
2 tablespoons white wine
1 tablespoon strong mustard (not too rounded)
1 cup cream, 15% fat or the like
1 large tablespoon chopped parsley


Fry the sliced sausage until light golden, remove from heat and keep warm. Brown the cleaned, finely sliced mushrooms, add wine and mustard and stir well with a wooden tool until the mustard is well blended with the rest. Add cream and simmer until thick. Flavor to taste with salt and pepper.

Heat up the sausage, put them on a serving plate and pour the sauce on top. Sprinkle with chopped parsley and serve with boiled potatoes or rice and tomatoes.

CREAMY GREEN PEPPER SALSA
Krämig grön paprikasalsa

The Spanish name of the small green peppers used in this sauce is "pimientos de padrón".

Serves 4

3½ oz pimientos de padrón
4 garlic cloves
0.4 cup olive oil
fresh juice from 1 lemon
salt, black pepper


Heat up a frying pan without any fat. Fry the padrones until the skin starts to blacken. Take them up, remove the stems and chop the padrones coarsely. Crush the garlic into the padrones, add olive oil and lemon juice and check for seasoning with salt and black pepper. Mix well, cover and store for at least 1 hour Before serving.

APPLE SAUCE (FOR FRIED FISH)
Äppelsås till stekt fisk

Easy to make, simple and delicious - a cold sauce that's perfect with fried or grilled fish.

Serves 4

0.8 cup soured cream
0.2 cup mayonnaise
1 tart apple, with or without the peel
approx 20 slices pickled gherkin
1 tablespoon liquid from the gherkins (optional)


Mix soured cream and mayonnaise. Dice apple and gherkins and stir this in. Dilute the sauce with some gherkin liquid if needed and wanted.

Serve with fried or grilled fish, preferably with boiled potatoes.

IDA'S HOME-MADE ICE CREAM CAKE
Idas hemlagade glasstårta

Ida's cake isn't shaped as these cakes usually are, but made in a rectangular bread baking pan. It consists of delicious almond paste layers alternated with berries of the season and ice cream. The success is … well, a success!

Serves 8

10.6 oz almond paste
3 eggs
1 tablespoon sugar
1.2 cups heavy cream
4 cups fresh or frozen berries like
raspberries, strawberries or blueberries


Heat the oven to 300F.

Coarsely grate the almond paste. Separate the eggs and beat the egg whites until stiff. Mix the almond paste with the egg whites.

Draw 3 rectangles on baking paper, using the bread pan you will use for making the cake (it should hold about 6 cups). Spread the almond batter onto that and bake the layers on the middle shelf of the oven for about 20 minutes. Transfer to a rack and remove the baking paper. 

Beat egg yolks and sugar until fluffy. Beat the cream and mix it into the egg batter with the berries. Alternate almond layers and berry creme in the pan - start and finish with almond layers. Cover with plastic foil and put in the freezer for at least 4 hours. Unmould the cake about 20 minutes before serving.

Decorate, if you wish, with 0.8 cup whipped cream and 2 cups berries.

This dessert really offers you most of the good things in life. A raspberry sorbet is transferred into a lovely mousse and served with a creamy, fruity sauce of sieved raspberries. (I have no idea if you can use the word "sieve" as a verb, I'm just improvising!)

Serves 4

14 oz fresh or frozen raspberries
0.6 cup sugar
0.6 cup water
0.6 cup heavy cream
raspberries for decoration

Sauce:
7 oz fresh or frozen raspberries
2 to 3 tablespoons sugar


Trim but do not rinse fresh raspberries. Purée them in a mixer or food processor and sieve them to remove the pips/seeds/whatever they're called … Bring sugar and water to a boil and stir until the sugar has dissolved. Allow to cool. Mix the liquid with the puré in a bowl and put in the freezer for 1 to 2 hours, until half frozen.

Take it out and beat with an electric beater until fluffy. Put back in the freezer for another hour and beat a couple of times. 

Beat the cream until thick and blend it into the raspberry puré about 1 hour before serving. Pour the mousse in a bowl and put in the freezer for another hour.

Mix the raspberries for the sauce and sieve them if you need to. Flavor with sugar. Unmould the mousse on a serving plate and decorate with some fresh raspberries. Serve the sauce separately.

Orange Parfait - Apelsinparfait

Orange juice, egg yolks and heavy cream is what you need to make an exquisite, home-made dessert. It's one of my faithful New Year desserts (I have a few favorites to choose between) and it tastes almost like ice cream, only much, much more.

Serves 4

4 egg yolks
0.3 cup powdered sugar
0.4 cup concentrated orange juice
0.8 cup heavy cream 


Beat egg yolks and sugar until White and fluffy. Add the concentrated orange juice into the batter. Beat the cream until hard and gently fold it into the orange batter. Pour in a bowl or in an ice cream maker (I Always use my ice cream maker and am so grateful for it) and put in the freezer for about 4 hours, in the ice cream maker for about 20 to 30 minutes (at least that is the normal time when I make it).

Leave the parfait in room temperature for 30 minutes before serving with a fruit salad or fresh, sliced fruit.

Vanilla Ice Cream with Strawberry Fluff - Vaniljglass med jordgubbsskum

VANILLA ICE CREAM WITH STRAWBERRY FLUFF
Vaniljglass med jordgubbsskum

Fluffy and simple. The leftover egg yolks can be stored in a well-sealed can in the fridge for 2 days to mix in e.g. a pasta dish. I know that raw eggs aren't always to be trusted in all parts of the world, though. Swedes have been spoilt with salmonella-free eggs.

Serves 4

1 vanilla pod
2 egg whites
8 oz frozen, half-thawed strawberries
3 tablespoons sugar
2 cups vanilla ice cream
lemon balm for decoration


Cut the vanilla pod lengthwise and scrape out the seeds. Separate the eggs. Mix strawberries, vanilla seeds, egg whites and sugar in a mixer or food processor until fluffy.

Divide the ice cream into serving glasses or bowls, top with the strawberry fluff and one or two lemon balm leaves and serve the dessert.

RASPBERRY STRAWBERRY GAZPACHO
Hallon- och jordgubbsgazpacho

A fruity, sweet version of the cold Spanish soup, traditionally made on raw vegetables. Serve well chilled in a bowl or serving cups or glasses.

Serves 4

1 cup raspberries
4 cups strawberries
1.2 cups water
0.4 cup sugar

Decoration:
raspberries
flaked white chocolate
lemon balm


Rinse and trim the berries (not the other way around). Mix raspberries and half of the strawberries with water and sugar to a smooth purée. Push it through a sieve and dilute with more water if the soup seems too thick.

Slice remaining strawberries and mix them into the soup. Store in the fridge until serving. Decorate with raspberries, flaked chocolate and lemon balm and also with some type of dessert cake if you wish.

Szegediner Goulash - Szegediner Gulasch

Szegediner Gulasch

The city of Szeged in southern Hungary is where this goulash was born. In the classic version of this stew there are three different kinds of meat. This is a more simplified version. Do not use a cast-iron pot as it doesn't go well with the sauerkraut.

Serves 6

1 tablespoon butter or margarine
3 to 4 middle-sized onions
1 garlic clove
2 green bell peppers
1 lb 12 oz lean pork collar
2 tablespoons Hungarian sweet paprika
0.8 cup water
2 teaspoons salt
1 bouillon cube (I mostly use chicken bouillon)
1 rounded tablespoon tomato paste
1 can sauerkraut, approx 1 lb

For thickening:
0.8 cup water
1 tablespoon flour


Peel and slice the onion. Trim and shred the bell peppers. Melt some fat in the pot you will use to cook the stew and sizzle the vegetables together with the crushed garlic clove. Cut the meat in ½-inch shreds and fry it together with the vegetables. Dust with the sweet paprika and add water enough to cover the meat and vegetables. Add salt and bouillon cube and boil for 30 minutes.

Make a thickening of water and flour, remove the pot from heat and stir in the thickening. Add tomato paste and sauerkraut and boil for another 30 minutes. Flavor to taste with pepper and more salt if necessary, but bear in mind that the bouillon cube contains rather a lot of salt.

FLAVORFUL FALU SAUSAGE STEW

This stew is suitable for any occasion, and even though it has quite a lot of ingredients, it's very easy to make.

1.1 lb Falu sausage or large sausage of the Frankfurter
or Strasbourger kind
2 large carrots
1 leek
1 can crushed tomatoes, approx 14 oz
0.4 cup water
1 meat bouillon cube
0.4 cup crème fraîche
1 teaspoon salt
2 tablespoons grated horseradish
2 tablespoons French-type mustard
4 drops Tabasco


Skin the sausage and cut in pieces. Trim and slice the carrots and trim, rinse and slice the leek. Alternate sausage, carrots and leek in a pot and add the tomatoes and water. Crumble the bouillon cube on top and bring to a boil.

Mix crème fraîche with salt, horseradish, mustard and Tabasco and stir this into the pot. Cover and simmer for 20 to 25 minutes, then flavor to taste.

Serve with boiled potatoes, pasta or rice and a salad.

Swedes would hardly manage the everyday food without the dear sausage, not to mention the mustard to go with it. Try this sausage pan with onions and cream to give the reliable staple food some variation. 

Serves 4

2 onions
1 tablespoon butter or margarine
1 tablespoon water
12.3 oz wiener sausage (yes!!!) or a smaller sausage (yes!!!)
0.4 to 0.6 cup cream
1 tablespoon Swedish mustard (sweet) or some equivalent
1 teaspoon soy sauce


Peel the onions, split it and thinly slice it. Heat the fat in a frying pan, add the onion together with water, cover with a lid and simmer the onions for about 3 minutes. Remove the lid, let the liquid steam off and let the onion take some color.

Slice the sausages, put them in the pan and fry them lightly. Add cream, mustard and soy sauce and boil for a couple of minutes. Serve straight away with boiled or mashed potatoes, peas and carrots. If you wish, you can also add some crispy fried bacon and mushrooms.

Ground Meat Patties with Red Wine Sauce - Pannbiff med rödvinssås

GROUND MEAT PATTIES WITH RED WINE SAUCE
Pannbiff med rödvinssås

A luxurious dish with a hearty red wine sauce, boiled potatoes and fried mushrooms. A favorite of mine through the decades.

1.1 lb ground meat of your choice (I use 50% beef, 50% pork
and pay a little more to have it freshly ground in the shop as
I get a better product)
1 egg
approx 0.4 cup cream or milk
0.2 cup dried white breadcrumbs
1 onion
2 tablespoons oil
salt, pepper
1 tablespoon Japanese soy sauce
butter or margarine for frying

Red wine sauce:
1 carrot
1 onion
2 celery stems
approx 1.6 cups veal bouillon
2 bay leaves
0.4 cup red wine
Maizena for thickening


Beat egg, cream and breadcrumbs and swell for a few minutes. Peel and finely chop the onion. Heat a frying pan with oil and sautée the onion until tender. Flavor to taste with salt and pepper. Stir the ground meat with sautéed onion, bread mixture and soy sauce. Cover well and leave in the fridge for about 1 hour.

Shape the meat into 4 patties and Brown them in fat. Take them up.

Peel and finely chop the vegetables for the sauce and sautée them in the pan juices for 3 to 4 minutes. Flavor to taste with salt and pepper. Add remaining ingredients for the sauce and bring to a boil. Put the meat patties in the sauce and slowly simmer for 10 to 15 minutes. Take the meat up and keep warm. Strain the sauce, flavor to taste and thicken with Maizena.

Serve with boiled potatoes or potato purée, fried chanterelles and fresh thyme. Or something else that you like!

Who feels like learning some kitchen Swedish in writing? I'll try to keep it simple but there will be some amount of explaining anyhow …

Dinner = Middag (originally means the meal you have at midday, but it's been postponed)

Meatballs in Curry Tomato Sauce - Köttbullar i curry- och tomatsås

MEATBALLS IN CURRY TOMATO SAUCE
Köttbullar i curry- och tomatsås

Meatballs in a delicious, easy-made, flavorful tomato sauce. The recipe uses ready-made meatballs, but I always have my own home-made meatballs in the freezer, so I prefer to use them.

Serves 4

1 1/3 lbs meatballs
12.3 oz cauliflower
1 onion
1 red chili fruit
2 tablespoons oil for frying
salt, pepper
2 tablespoons finely cut fresh ginger
2 teaspoons turmeric
1 tablespoon curry 
2 teaspoons ground cumin
1.6 cups tomato juice
8.8 oz green peas
0.4 cup roasted, sliced almonds
approx 0.4 cup chopped parsley


Part the cauliflower in florets. Slice the onion. Split and remove the seeds from the chili and slice thinly. Heat up some oil in a frying pan and fry the cauliflower on medium heat until slightly colored. Flavor with salt and pepper. Add onions, chili and ginger and fry with the cauliflower for a couple of minutes. Dust with the spices and stir. Add meatballs and heat through. 

Add tomato juice and green peas and simmer for 4 to 5 minutes until it's all hot. Flavor to taste with salt and pepper. Sprinkle with almonds and parsley and serve with e.g. boiled rice.

Bacon and Egg Salad - Bacon- och äggsallad

BACON AND EGG SALAD
Bacon- och äggsallad

Serves 4

10.6 oz boiled new potatoes
3 eggs
7 oz green beans
4.4 oz bacon
3.5 oz baby spinach
3.5 oz black olives
½ can green lentils, 7 oz

Dressing:
3 tablespoons olive oil
1 tablespoon vinegar
1 crushed garlic clove
1 tablespoon Dijon mustard
2 tablespoons capers
2 anchovy fillets


Cut the potatoes in pieces. Boil the eggs for 9 minutes. Peel and split them. Bring the beans to a boil in salted water and rinse cold. Shred and fry the bacon and rinse the spinach.

Mix the dressing together. Blend all the ingredients for the salad and pour on the dressing.

POTATO SALAD WITH A SPECIAL SAUCE

Serves 8 - 10

3.4 lbs boiled, cold potatoes
1.2 cups thinly shredded leek
1.2 cups shredded, chopped pickled gherkin
or 3 tablespoons capers
1 head iceberg lettuce
2 bunches radishes

Sauce:
0.6 cup soured cream
0.6 cup low-fat mayonnaise
3 tablespoons strong mustard
1 tablespoon grated horseradish (or as much as you like, it's strong)


Make the sauce and put in the fridge for 30 minutes, then mix with sliced potatoes, leek, and gherkin or capers.

Store the salad cold for a couple of hours, then serve in a bowl with shredded iceberg lettuce and sliced radishes.

Twangy Potato Salad - Potatissallad med sting

TWANGY POTATO SALAD
Potatissallad med sting

A very tasty potato salad with simple ingredients. Boil the potatoes 2 days before serving for the best possible result.

Serves 8

2.2 lbs boiled, cold, un-peeled potatoes
2 onions
1 teaspoon paprika
1 teaspoon powdered chili
some curry
1 teaspoon salt

Dressing:
1 tablespoon fresh lemon juice
2 teaspoons apple cider vinegar
1 teaspoon water
½ teaspoon Swedish mustard (sweet) or other equivalent
½ teaspoon herbal salt or spice salt
4 tablespoons oil

Decoration:
chopped parsley


Peel and dice the potatoes in rather large cubes. Chop the onions, put it in a bowl with the potatoes and flavor with paprika, chili, curry, and salt.

Blend together all ingredients for the lemon dressing - lemon juice, water, mustard, and herbal salt - and stir until the salt has dissolved. Add oil and pour the dressing over the potatoes. Stir and store cold for 1 day. Check for seasoning and adjust if needed.

Serve this potato salad room-tempered, absolutely not cold. This is important.

Strawberry Chocolate Latte - Jordgubbs- och chokladlatte

STRAWBERRY CHOCOLATE LATTE

Serves 1

Espresso or other strong coffee
5 strawberries
0.8 cup milk
½ tablespoon cocoa
sugar to taste


Make the coffee. Mash the strawberries with the sugar. Mix coffee, milk, cocoa and ice in a mixer or use a hand shaker. Add the mashed strawberries, mix again and serve straight up in glasses. 

You get a child-friendly version if you just omit the coffee.

Cold Coffee Cinnamon Drink - Kall kaffedrink med kanel

COLD COFFEE CINNAMON DRINK
Kall kaffedrink med kanel

Serves 1

0.6 cup cold coffee
2½ tablespoons brown sugar
4 ice cubes
½ teaspoon cinnamon
0.6 cup whipped cream


Put all ingredients in a food processor or mixer and blend well. If you want alcohol in the drink, you can add 2 tablespoons light rum.

Raspberry Ginger Drink - Hallon- och ingefärsdricka

RASPBERRY GINGER DRINK 
Hallon- och ingefärsdricka

A perfect mix of soft drink and more grownup drink. If there are children present you can take a little less ginger. Keep in mind that it can be very different in taste from time to time, so "feel your way"!

Makes approx 8 cups

1.1 lb raspberries
2 tablespoons + 0.2 cup water
1/4 inch fresh ginger
1.2 cups sugar
4 cups ginger ale
2 tablespoons fresh lemon juice

For serving:
raspberries
lots of ice


Put the raspberries in a saucepan and add 2 tablespoons water. Boil on low heat until the berries are mushy. Push them through a sieve. Peel and finely shred the ginger. Bring sugar, 0.2 cup water and ginger to a boil, then remove and leave for 10 minutes. Strain off the ginger.

Mix the raspberry juice with the sugary liquid in a bottle and put in the fridge. Mix with ginger ale and lemon juice just Before serving with whole raspberries and lots of ice in each glass.

Sometimes you just don't have the appetite, or enough time, for a proper breakfast. Then this drink with fruit juice, yogurt and wheat germs gives you what you need to start off the day in a good way. 

4 glasses

2 oranges
1 to 2 red grapefruits
1 large banana
1.6 cups plain yogurt
4 tablespoons wheat germs


Split oranges and red grapefruits. Cut 2 slices orange for decoration, split them and set aside. Juice the fruits - you'll need approx 1.6 cups juice for these drinks. Pour the juice in a mixer or food processor. Peel the banana, slice it into the fruit juice and mix to a smooth purée. Add yogurt and mix really well. Add wheat germs and mix quickly until well blended.

Pour into large glasses and attach the orange slices on the edge. Serve with a straw as breakfast or with brunch.

You can change the drink according to taste and season. You can use only grapefruit and banana or only orange and banana. Instead of citrus fruits you can use mango or papaya, and you can substitute wheat germs with oats or oat bran. If you're in a hurry you can also use bottled orange juice of course. And, best of all, you can mix the drink in the evening and store in the fridge until the morning. Stir well Before serving.

Raggmunk with Fried Pork - Raggmunk med fläsk (Swedish classic)

Raggmunk med stekt fläsk

The name of this dish, "raggmunk", is impossible to translate. But it's basically a pancake of grated, raw potatoes that's mixed with flour, salt, milk and egg and then fried. It's especially good with fried pork and lingonberry jam, and it's still keeping its position on the restaurant lunch menus in Sweden.

Serves 4

0.8 cup flour
1 teaspoon salt
1.6 cups milk
1 egg
1 lb 11 oz firm potatoes
butter or margarine

14 oz salty pork
lingonberry or cranberry jam


Beat flour, salt and some of the milk until smooth and lump-free. Beat in remaining milk and egg. Peel the potatoes and grate them coarsely straight into the egg batter. Melt some fat in a frying pan - take 0.2 cup of the batter for each "raggmunk". Fry for a minute or so on each side until they're nice and golden.

Fry the pork and serve the raggmunkar with pork, jam and grated carrots.

In the summer you should really try to enjoy the ripe tomatoes. If you have an open market nearby where you can buy cheap tomatoes of different sizes, do so, because they're excellent for soup!

Serves 4

1 tablespoon butter or margarine
1 large onion
1 garlic clove
1.1 lb tomatoes
4 middle-sized potatoes
2 tablespoons finely chopped chives
1 bay leaf
some dried thyme
zest from 1/4 lemon
4 cups water
1 vegetable bouillon cube
½ teaspoon salt
some black pepper

For serving:
0.4 cup soured cream
0.2 cup finely chopped parsley


Melt the fat, chop the onion and sautée it in a pot without browning. Add the crushed garlic clove. Cut the tomatoes in wedges or slices and scrub and slice the potatoes. Add tomatoes, potatoes, chives, bay leaf, thyme and lemon zest to the onion and garlic in the pot. Add water and slip in the bouillon cube, salt and pepper. Bring to a boil and then simmer slowly for 20 minutes.

Pour the soup in a mixer or food processor and mix until smooth, then pour it back in the pot and bring to a boil. Serve with some soured cream and chopped parsley.

Mitt-i-veckan-soppa

Delicious and so easy to make. Double the recipe while you're at it!

Serves 2

1 red bell pepper
1 small onion
1 garlic clove
approx 8.8 oz ground beef
oil for frying
½ tablespoon paprika
1 tablespoon tomato paste
1 to 1.2 cups bouillon (I use chicken bouillon)
salt, pepper
1 large potato

For serving:
bread
cooking yogurt or crème fraîche


Cut the bell pepper in pieces and chop onion and garlic. Fry the meat in a little oil with the paprika. Add bell pepper, onion and garlic, tomato paste and bouillon and flavor with salt and pepper. Peel and grate the potato and stir it in. Boil for 20 minutes.

Serve the soup with some bread and a dab of cooking yogurt or crème fraîche on top.
