Apple delight - Äppellust (retro)

APPLE DELIGHT
Äppellust

4 servings

6 middle-sized apples
3½ oz almonds
2 eggs
2/3 cup sugar
2 tablespoons butter or margarine
1½ teaspoons ground cinnamon
3 tablespoons cognac or sherry
cocktail cherries for decoration


Core and peel the apples and put them in a greased, oven-proof dish. Scald and grind the almonds. Beat eggs and sugar until fluffy. Add the almonds and the now cooled fat. Flavour with cinnamon and some cognac or sherry to taste.

Fill and cover the apples with the batter and bake at 350F for about 30 minutes or until the apples are golden brown. Decorate with cocktail cherries and serve with chilled, whipped cream or a dab of vanilla ice cream.
