Apple-filled cinnamon buns - Kanelbullar med äppelfyllning

APPLE-FILLED CINNAMON BUNS
Kanelbullar med äppelfyllning



In Sweden, we celebrate the Day of the Cinnamon Bun on October 4th. I don’t know where we’ve got that from but as long as it comes to sweets I’m in!



Approx 20 buns



1/3 cup cream
1/3 cup milk
1 ¾ oz fresh yeast
2½ oz butter or margarine, room-tempered
3 tablespoons sugar
1 egg
approx 3 ¼ cups wheat flour



Filling:
¾ cup apple sauce
1½ teaspoons ground cinnamon

1 egg for brushing

crushed loaf sugar and powdered
sugar for decoration





Pour cream and milk in a saucepan and heat to approx 37°C/body heat. Crumble the yeast in a mixing bowl and dissolve it in some of the milk/cream mixture.



Stir fat and sugar until fluffy and add egg, yeast mixture and remaining liquid. Add the flour and work to a smooth dough. Let rise for about 40 minutes.



Roll out the dough and measure approx 20 rounds, diameter around 9 cm/4 inches – use a glass or something. Put a little applesauce in the middle of each round, dust with ground cinnamon and pinch well together so that it doesn’t come out. Put them, seamside down, on baking plates with baking paper. Leave to rise for about 30 minutes. Heat the oven to 480F.

Brush with egg and sprinkle with crushed loaf sugar. Bake in the middle of the oven for about 8 to 10 minutes.
