APRICOT PUDDING
Aprikospudding
6 egg whites
2 cups vanilla sauce, home-made or instant
1/3 cup sugar
¼ cup whipped cream
whipped Cream
Rinse the fruit and boil until tender in some water. Purée them and stir together fruit mash and sugar. Beat and turn the egg whites into the batter and pour it all in a round or pleated baking dish. Boil in a waterbath at 350F in the oven for about 1 hour.
Aprikospudding
In the early days, even finer desserts were made with
dried fruit. The vanilla sauce gets some extra twang here thanks to the fact that it's blended with caramel sauce.

8 oz dried apricots
¾ cup powdered sugar6 egg whites

Decoration:
1 can apricots, 14 ozwhipped Cream
Rinse the fruit and boil until tender in some water. Purée them and stir together fruit mash and sugar. Beat and turn the egg whites into the batter and pour it all in a round or pleated baking dish. Boil in a waterbath at 350F in the oven for about 1 hour.
Melt the sugar until caramel-coloured in a dry frying
pan, blend it into the vanilla sauce and last turn in the cream.
Unmould the pudding, decorate with canned apricot
halves and piped cream and serve lukewarm.
