BANANA SHRIMP HAM ROLLS
Skinkrullar med bananräkor

A nice and festive dish where the smoked taste from the ham is combined with shrimp and bananas, baked in the oven.

4 servings

3 bananas
1 can peach halves, approx 14 oz
approx 1 lb un-peeled shrimp or 6 oz peeled
12 slices smoked ham, approx 14 oz
3 tablespoons butter or margarine
3 tablespoons flour
1 ¾ cups milk
½ fish bouillon cube
½ teaspoon Chinese soy sauce
salt, pepper
¼ cup heavy cream
1 egg yolk
¾ cup grated cheese

Decoration:
chopped dill


Peel the bananas, cut them in half and split lengthwise. Slice the peaches. Put one piece of banana plus  some shrimps on each slice of ham and roll them up. Put the rolls in a greased, oven-proof dish and top with the sliced peaches.

Melt the fat in a saucepan and dust with the flour. Beat the milk into the batter and add crumbled bouillon cube and soy sauce. Boil the sauce for 3 to 5 minutes and flavour to taste with salt and pepper. Add cream and let the sauce boil for a few minutes more. Beat in the egg yolk.

Pour the sauce over the ham rolls and sprinkle with cheese. Bake in the upper part of the oven at 390F for about 20 minutes. Sprinkle with chopped dill and serve with riced potatoes and boiled broccoli.
