BLUE CHEESE-BAKED FILLET OF PORK
Ädelostgratinerad fläskfilé
salt, white pepper
10 oz fresh mushrooms
3½ oz blue cheese
¾ cup heavy cream
¾ cup crème fraîche or soured cream
1/3 cup chopped parsley
2 teaspoons Chinese soy sauce
Melt half of the fat in a frying pan and brown the whole fillet all around until coloured, 5 to 10 minutes. Slice the meat and put it in an oven-proof dish. Flavour with salt and pepper. Slice the mushrooms, melt remaining fat and fry the mushrooms for 5 to 10 minutes. Flavour with salt and pepper. Put the mushrooms in the dish and crumble the blue cheese on top.

1 to 1 1/3 lbs fillet of pork
4 tablespoons butter or margarinesalt, white pepper

Slice the mushrooms, melt remaining fat and fry the mushrooms for 5 to 10 minutes. Flavour with salt and pepper. Put the mushrooms in the dish and crumble the blue cheese on top.
Mix cream, crème fraîche, parsley and soy sauce.
Pour it all in the dish and bake the meat in the middle of the oven at 390F for 15 to 20 minutes. Serve and enjoy!
